Made in Italy to be the top of the line for shaped chocolate making, the Selmi Auto-Molder takes plastic molds and fills them with either chocolates or confections, then cools them where they be popped out and finished with a layer of chocolate in an enrober. These molds can also feature inclusions depending on the size of the inclusion.

CHOCOLATE TRUFFLE OPTIONS

Traditional Enrobed Truffles – Featuring molded chocolate ganache centers, our Traditional Enrobed Truffles have the soft center you’re looking for, but the shelf stability of an enrobed chocolate. These truffles can have a variety of flavors, with different chocolate ganache centers and also inclusions like roasted nuts or diced toffee pieces.

Better for You Chocolates – For these truffles, we can incorporate a wide variety of superfoods, adaptogens, and supplements into the ganache filling of our chocolate enrobed truffles. These ingredients can balance out the sweetness of the chocolate with added nutritional value, making the confection more than just a dessert, but an essential part of a daily diet.

Novelty Shapes – For a small fee to purchase or design molds, we can produce novelty shapes like hearts, eggs, and other holiday shapes. These shapes will have a thin chocolate coating around the outside, then whatever ganache center you can think of, from traditional flavors like raspberry flavored dark chocolate to more unique ingredients like a puffed quinoa crisp. Novelty shapes are a great way to take existing products and position them for holiday sales without having to radically redesign the formula.
