Groen Oil Jacketed Kettle Cooker

Featuring an auto-mixing blade, this large volume kettle cooker can produce perfectly mixed syrups to season or flavor your snacks.  Oil jacketed kettles can also produce confections, which means that we can produce things like toffee peanuts or similar items.

Trays of Caramel

Hot caramel is poured into sheet pans to cool into slabs that can be cut later. This process also allows you to batch out multiple productions of caramel ahead of cutting and enrobing.

Caramel slabs are cut into perfect squares prior to enrobing. Cutting dies can be purchased to create different sizes and shapes.

CARAMEL TYPES

Traditional Caramel – Made with sugar, butter, and cream, Traditional Caramels can be cooked to a soft texture or to a chewier texture, creating a longer or shorter ‘pull’ of the caramel. Enrobing them in chocolate adds great flavor and increases the shelf life of the caramel. Traditional Caramels can have inclusions like roasted nuts or seeds as well as a variety of toppings like decorative toppings like drizzles or sprinkles or flavorful toppings like sea salt or candies.

Honey Caramel – Trading some of the sugar for honey is what makes our Honey Caramels special. The honey gives the caramel a softer texture and a longer ‘pull’, which provides a delightful contrast with the chocolate shell. Honey Caramels also have available inclusions and toppings like Traditional Caramels.

Alternative Sugar Caramel – For Alternative Sugar Caramels, we swap all of the sugar with a blend of alternative sugars and sweet fibers, resulting in a caramel with very few net carbohydrates. These caramels are enrobed in low sugar or alternative sugar chocolates. Like Traditional and Honey Caramels, Alternative Sugar Caramels can feature inclusions and toppings.

Flavored Caramel – By using oil-based flavorings and natural colors, we can create some truly unique Flavored Caramels. If you can think of a great flavor for a caramel, we can execute it, like we’ve executed Red Velvet, Cosmopolitan, or Peppermint Caramels. These Flavored Caramels can also feature inclusions and toppings like all of our caramel offerings.
